The Confuego Group —with its brands Pizzart, Steakburger, Superchulo and Ôven, and already 26 establishments in Spain— continues its growth and opens its third Superchulo restaurant in the center of Madrid, designed by Pablo Roig. It is a space that presents the brand’s new identity and the evolution of its gastronomic proposal, expanding beyond its plant-based origins while maintaining its joyful and vital essence. “Superchulo has never confined itself to a label, and we believe everyone can reflect, change and dare to be themselves,” explains Rebeca Toribio, founder of Superchulo. “Superchulo is an extension of my own way of eating, and recently I’ve included fish in my diet — I wanted to introduce it at Superchulo as well.” Interior designer Pablo Roig has created here a project that turns the restaurant into a sensorial experience, where materiality, color and landscape weave together in balance.
From the entrance, the space is perceived as a warm pause. A continuous coating of terracotta-pigmented lime mortar unifies floors, walls and ceilings, tracing a material horizon that envelops the visitor with softness. Upon this surface, the studio models curved geometries and stepped heights that guide the eye and define the interior sequence. Built-in benches follow the soft waves of the upper ceilings, forming sheltered corners and spaces where conversation unfolds naturally. The cellulose spray applied to the ceiling improves acoustics and adds a tactile, organic note that enhances overall comfort.






The materiality is honest. Natural woods, marble with pronounced veining on the bar and counter, and soft linens and cottons in the seating. Vegetation, in the form of hanging volumes and floral arrangements by Rubén Cano, brings with it the idea of a lived-in, familiar, everyday nature. At the heart of the dining room, a collaboration with the Santa & Cole gallery made it possible to incorporate a mural by artist Paulina Silva —created with natural pigments and organic forms inspired by landscapes— which becomes the emotional anchor of the space. It is a poetic gesture that unites art, culinary experience and interior architecture into a single visual narrative.
Every detail, carefully calibrated, contributes to shaping the Superchulo identity: the blush-pink Phantom chairs by Vitra —iconic for the brand— coexist with contemporary pieces such as the Eclipse chairs by Teulat. Small Klein-blue ceramics from Marrakech appear as vivid accents, recalling that the cuisine celebrates the earth in its chromatic diversity. As evening arrives, lighting takes on a leading role. Designed by the studio itself, it reveals curves, highlights shadows, invites intimacy. Table lamps by Hay and &Tradition introduce a soft, warm rhythm that accompanies long dinners and unhurried gatherings.
Superchulo Canalejas operates throughout the day —breakfast, lunch, coffee, afterwork— and presents itself as a place where the spatial and gastronomic experience are inseparable. A contemporary space that demonstrates how well-being can also be built through atmosphere. Pablo Roig signs here a balanced, mature and emotional intervention.

Pablo Roig
Pablo Roig is an interior designer trained at the Polytechnic University of Madrid, where he obtained a Degree in Interior Design in 2014. His career has been shaped through a continuous practice attentive to the spaces we inhabit and to the way they influence our daily experiences. From the beginning, his focus has been oriented toward creating atmospheres for social life: restaurants, hotels, meeting spaces and workplaces—places where architecture becomes relationship.
For five years, he developed his professional career at Madrid In Love Studio, leading the design of hospitality and contract spaces that have shaped part of Madrid’s contemporary scene. This experience strengthened his ability to coordinate teams, work in dialogue with brands and operators, and translate concepts into architectural environments that are both sensitive and functional. In 2021, he began his independent path by establishing his own studio in Madrid. Since then, his practice has focused on interior design, interior architecture and comprehensive project direction, developing work in Spain, Portugal and Switzerland. His approach always begins with deep listening: understanding the identity of each client, the energy of the site, the real functionality of the space, and from there building warm, coherent and understated atmospheres where life can unfold naturally.
Alongside his professional work, Roig maintains an active role in teaching and design culture. He is Professor of Restaurant Design in the Master in Interior Design and Hospitality at IED Madrid (2025), and has been invited as a lecturer since 2020 in academic programs linked to the Complutense University of Madrid and Elle Education, where he shares his view of design as a cultural and human process.
His work can be recognized in the use of honest materials, in the light that defines the rhythm of interior spaces, and in textures that create silence or conversation. His projects reveal a sensitivity to the everyday and to the subtle warmth that makes a space truly habitable. From Madrid, his studio is driven by the aim of designing meaningful places—full of life—where comfort, beauty and identity coexist in harmony.
